Buckeyes

1 ½ lb (6 cups) powdered sugar

½ lb (2 sticks) butter

18 oz (2 cups) peanut butter or Wow butter or your favorite peanut butter substitute

 

Mix all ingredients together with hands. It may seem like there is no way it will all come together - just keep going! It will work!

Roll into balls (About ½ - 1 tbsp) & place on baking sheet covered with parchment paper or wax paper. If the dough is not sticking together well, just squish like you would playdough, then roll it.

Chill for about 10-15 minutes .


Melt in double boiler or heavy saucepan (see notes):

   12 oz (2 cups) semi-sweet chocolate chips

   ¼ cake paraffin

 

Remove pan from heat. Stick peanut butter ball with toothpick & dip in chocolate – cover a little more than half of the ball. Return to baking sheet & chill again. (Just until chocolate is set – maybe another 15-20 mins) If your dipping chocolate starts to get thick, just heat it up a little until it thins out again.

 Smooth over toothpick hole (after chilled).

 Notes:

If you have no idea what a double boiler is - no worries! Just use a heavy saucepan. As you can see, mine is ancient! It belonged to my mom (a very popular pan in the 1950’s!). This is the only thing I use mine for. It’s nice because it melts the chocolate really nicely without burning it. But you can also accomplish this in a heavy saucepan. The paraffin melts a little better if you cut it into chunks. And keep stirring over low-medium heat.

Paraffin usually comes in 4 blocks in a box. Since you only need a quarter of a block, I score it with a sharp knife, then cut it.

This recipe makes 10-12 dozen buckeye’s! But it is easy to half, or even quarter.

You can freeze them, but occasionally the chocolate will get a little white. They keep well in the refrigerator.

You can also dip in white chocolate or dark chocolate – whatever you like!

I usually end up with extra dipping chocolate at the end. So, I have a few GF pretzels to dip, leaving plain or I sometimes sprinkle with red or green sugar or Christmas sprinkles. Or I just pour a little chocolate in mini muffin cups, then you can top with crushed peppermint candy (I crush candy canes), your favorite chopped nuts or sprinkles. You can also mix the crushed peppermint or nuts into the chocolate before you drop it in the mini cups.
