1½ cup flour or 1 ½ cup ATK flour + ¼ & 1/8 tsp xanthan gum
1 cup brown sugar
1¼ cup GF rolled oats
¾ cup butter, softened
¾ cup jam – raspberry or blueberry or strawberry
Whisk together flour & xanthan gum.
Mix in sugar & rolled oats. Work in butter with pastry cutter until crumbly. (Can use mixer, but the dough should be crumbly, not formed.)
Press ½ of mixture into 8x8” pan sprayed with GF baking spray.
Spread base layer with jam. (It’s ok if the jam picks up crumbs from the base.)
Press remaining crumb mixture over jam.
Bake at 325° for 40-45 minutes. Crust should be golden brown.
Remove pan & place on wire rack to cool. Cool completely.
Cut into squares.
