French Silk Pie

Crust (3 options)

   Graham Cracker Crumbs

            1½ cups GF graham cracker crumbs (see notes)

            6 tbsp butter, melted

            ¼ cups sugar (you can substitute some brown sugar in for the white – just depends on your personal taste!)

Mix all ingredients together in a bowl until crumbs are moistened.

Gently press into 9 inch pie pan.

Bake at 325° for 10 minutes.

Cool completely before adding filling.



   Crushed GF Oreos

            20 regular stuffed GF Oreos

            3 tbsp butter, melted

Place Oreos in food processor & pulse until crumbs are formed.

Add melted butter & pulse until crumbs are moist.

Gently press into 9 inch pie pan.

Bake at 350° for 10 minutes.

Cool completely before adding filling.

 

   Regular Pie Crust

            I like America’s Test Kitchen recipe for a single pie crust.



Filling

   1 cup butter

   1½ cups sugar

   4 oz unsweetened chocolate, melted & cooled

   1 tsp GF vanilla

   4 eggs

Beat butter & sugar until smooth & fluffy.

Blend in chocolate & vanilla.

At medium speed, beat in eggs one at a time, beating for 5 minutes after each egg.

   *This is a key step, don’t cheat on the time!

Pour filling into baked & cooled pie crust.

Chill several hours before serving. (At least 3, but more is ok! It will keep well overnight)



Toppings – Options (see notes)

   Whipped Cream

   Shaved or grated chocolate

   Crushed Oreos

   Chocolate sauce (drizzled)

   Cocoa (lightly sprinkled)

Notes:

I know not everyone is comfortable with this recipe because of the uncooked eggs in the filling. The consensus seems to be that as long as you use pasteurized eggs, they are safe. I have been eating this particular recipe since I was a kid & my mom would make it - & no one ever got sick.

 I have found it hard to find GF graham cracker crumbs. So I just crush GF graham crackers. I just put a few of the crackers in a ziplock bag & crush with a rolling pin or the flat side of a meat tenderizing mallet. But you can also put them in a food processor & pulse a few times to make the crumbs.

 This pie is VERY rich! I add toppings just for decoration. Be creative & make it your own!

When my family taste-tested this pie, one of them described it as “dangerously delicious”! So, enjoy!
