French Toast Muffins

 
 

Muffins

1 loaf of Brioche bread or 1 loaf of your favorite GF brioche bread or 1 loaf of Trader Joe’s GF white sandwich loaf (See notes)

6 eggs

2 cups milk

1 tbsp GF vanilla

3 tbsp light brown sugar

1 tsp cinnamon

½ tsp salt

 

Topping

            4 tbsp brown sugar

            2 tbsp white sugar

            ½ tsp cinnamon

            2 tbsp cold butter (I cut into small pieces, it will combine easier)

 

Optional Toppings for serving

            Maple syrup

            Cinnamon or cinnamon & sugar

            Whipped Cream

            Plain yogurt

            Any other topping that you usually put on your French toast

 

Preheat oven to 350° 

Prep a 12 cup muffin tin by lining with muffin cups or lightly spray with GF baking spray (my preference)

 

Muffins

Cut up bread into bite sized cubes & place in large bowl

 

In a medium bowl whisk eggs. Then add milk, vanilla, brown sugar, cinnamon & salt. Whisk ingredients together until completely combined.

Pour egg mixture over cubed bread & gently stir. Let stand for 5 minutes (to give the bread a chance to absorb some of the liquid).

 

Spoon into muffin cups.

 

Topping

In small bowl, combine brown sugar, white sugar & cinnamon.

Cut in cold butter pieces until crumbly. I use a fork, but you can also use a pastry cutter.

Sprinkle topping over muffins.

 

Bake for 20 minutes or so until the top is golden brown & the center is set (A toothpick stuck in the center of a muffin should come out clean)

 

Remove from muffin tin. If you did not use muffin cups, I gently run a table knife around the sides, then scoop out with a tablespoon.

Serve warm with your favorite topping.

The original recipe calls for Brioche bread, but I use Trader Joe’s GF white sandwich bread loaf. It’s very similar texture to Brioche bread & works really well.

I like this recipe because if everyone is having French toast for breakfast, it doesn’t leave one person standing at the stove making the French toast while everyone else gets to start eating. It’s also a nice addition to a breakfast buffet with a few toppings nearby so everyone can make it their own way!
