Easy Fudge

Combine in heavy saucepan:

   2 cups sugar

   ½ cup butter

   1 cup (8 oz) evaporated milk

Bring to full boil over medium-high heat, stirring constantly.

Boil 10 minutes, stirring occasionally. Turn down heat enough that mixture continues to boil, but doesn’t boil over!

 Stir in:

   1 cup (6 oz) GF chocolate chips (whatever your favorite is – milk, dark, semi-sweet, mint)

   ¾ cup flour or ¾ cup Trader Joe’s GF flour + ¼ tsp xanthan gum or ¾ cup America’s Test Kitchen GF flour blend + ¼ tsp xanthan gum

   1 tsp GF vanilla

   Optional: 1 cup finely chopped nuts

Spread in 12 x 8 inch or 9 x 9 inch pan sprayed with GF baking spray. (Can use 8 x 8 inch pan, but fudge will be quite thick.)

Cool completely & cut into squares.

Option to decorate with ½ nut (like pecan or walnut)

Notes

I like this particular recipe because it’s easy & you don’t need a candy thermometer!

The evaporated milk is an odd amount. You can buy 2 of the small cans (5 oz each) & have just a little extra left over. Or you can buy 1 large can (12 oz) & have about ½ cup left.

You can use Bob’s Red Mill GF flour, but for me it got very lumpy. I poured it through a strainer & it was fine, but more work & a little messy!

You can substitute mint extract for the vanilla, but keep in mind that it may have trace amounts of gluten. See blog post “A guide to gluten free products”.
