Lemon Bars
Mix together:
2 cups flour or 2 cups ATK flour + ½ tsp xanthan gum or 1 1/3 cup white rice flour + 2/3 cup millet flour + ½ tsp xanthan gum
½ cup powdered sugar or ½ cup 1:1 sugar free powdered sugar substitute (like Swerve)
Cut in with pastry cutter (can use mixer, but only mix until crumbs formed):
1 cup butter
Press into 9x13” pan sprayed with GF baking spray.
Bake at 350° for 18- 20 minutes (may take 20-25 minutes if using regular flour)
Beat together:
4 eggs
2 cups sugar
1/3 cup lemon juice
Add:
¼ cup flour or ¼ cup ATK flour + 1/16 tsp xanthan gum or ¼ cup white rice flour + 1/16 tsp xanthan gum
½ tsp baking powder
Pour over hot crust.
Bake for 20-25 minutes until set (do not under-bake, it should be golden brown & feel firm to the touch).
Cool on wire rack.
When completely cool, sprinkle with powdered sugar or sugar free powdered sugar substitute.
Cover with as much or as little powdered sugar as you like!
Notes:
The original recipe was called Lemon Squares, but I can’t seem to cut them into squares to save my life, so I just changed the name to Lemon Bars!
These do not freeze well. But you can keep them in the refrigerator for quite awhile.
