Spinach & Sun Dried Tomato Salad or Pasta

1 jar sun dried tomatoes, packed in oil (I use julienne cut)

10 oz bag baby spinach

6 oz feta cheese (I use feta with tomatoes & olives or mediterranean seasoning, but plain works too!)

2 cloves minced garlic (optional)

Salt & Pepper

Asiago or Parmesan cheese, grated (I usually use fresh & grate it right on top, but you can purchase it grated already also)

¾ - 1 lb GF angel hair pasta (optional)

 

Combine tomatoes, salt, pepper, & garlic (if using). Toss in spinach, feta cheese & oil. I use the oil from the tomatoes, but you can use olive oil if you prefer, about 2 tbsp should work. How much you use is personal preference. I usually use between ¾ & all of the oil in the jar. Sprinkle with grated cheese.

If you want to make a bigger salad, I buy the baby spinach in the bigger plastic container. Then use 2 jars of tomatoes & double the feta cheese.

This recipe is one of my favorites! It’s great just as a salad. But it can also be served on top of your favorite GF angel hair pasta for a more substantial side dish.
