Strawberry Shortcake with Baking Powder Biscuits

Biscuits

1 cup Bob’s Red Mill Gluten Free 1 to 1 flour or 1 cup of your favorite GF flour + ¾ tsp xanthan gum (omit if your flour blend already contains)

2 tsp baking powder

1/4  tsp salt

2 tbsp vinegar

3 eggs

1 tbsp butter, melted

2 tbsp. sugar, optional – if you like a little sweeter biscuit for your strawberry shortcake

Sugar, optional – you can sprinkle al little on top of the biscuits after brushing with egg

yolk to finish them off nicely.

 

Topping

Strawberries

Whipped Cream or Vanilla Ice Cream, optional

 

Spray small (I use a 10 inch) cast iron skillet with GF baking spray. You can also use a small baking pan, but the cast iron pan gives the biscuits a nice golden brown bottom.

In medium mixing bowl whisk together flour, baking powder, salt & sugar (if using).

Add vinegar & eggs. Stir to completely combine. (I find a fork works best to mix it all together.)The dough may be a little sticky, but it will hold its shape. If it is not sticking together, just a water - but only a few drops at a time! (It is easy to go from too dry to too wet!)

Spoon dough into 6 biscuits in prepared pan. Brush with melted butter.

Sprinkle with sugar (if using).

Bake at 400° for 15 minutes. (The tops may not get golden brown, but they will be firm & a little springy to the touch. And they should be light & airy on the inside.)

Serve warm, topped with strawberries & whipping cream or ice cream. *See notes.

The biscuits can also be used with a meal, as an easy alternative for GF bread or buns (for sandwiches or burgers). Or instead of toast for breakfast, with a little honey, jam or peanut butter. Maybe just don’t add the sugar if you are not using for dessert.

It seems every family has their own idea of just what strawberry shortcake is! In my family, my mom always used baking powder biscuits as the base. She would quarter fresh strawberries & put them in a bowl, then smush them just a little with a potato masher or a fork – it makes them nice & juicy! If the strawberries are really sweet, serve them like that. If they are not as sweet as you would like, you can add a little sugar when you smush them. We always used fresh whipped cream on top. But you can use redi-made whipped topping (in the cooler section of the grocery store or from a can). Or a scoop of vanilla ice cream on top is delicious too. You can also put the strawberries on angel food cake or sponge cake.

These are just a few ideas. Make this dessert your own! But if you use biscuits for a base, hopefully these will work for you.

If you haven’t whipped your own cream before, it’s really easy. Just pour the heavy whipping cream in your mixing bowl & whip until it looks nice & fluffy. It is NOT sweet, so I add powdered sugar, a little at a time until it’s the right sweetness. You can also add a few drops of GF vanilla if you like. How you make your whipped cream is totally based on your personal preference!
