Peach Cobbler
1½ lbs peaches (about 5 medium peaches)
½ - 1 cup blueberries, raspberries or blackberries, optional
2 tbsp brown sugar
1 tsp cinnamon
2 cups sugar, divided into ¼ cup & 1¾ cup
1 cup unsalted butter
2 cups flour or 2 cups Trader Joe’s GF flour blend + ½ tsp xanthan gum or 2 cups Bob’s Red Mill 1 to 1 GF flour or 2 cups of your favorite GF flour blend + ½ tsp xanthan gum (omit if your flour already contains)
1 tbsp baking powder
½ tsp kosher salt
2 cups milk
1 tbsp GF vanilla
Peel & pit peaches. Slice into ¼ inch thick slices. Place in medium bowl. Add brown sugar, cinnamon, & ¼ cup sugar. Toss to combine. Set aside. (It should sit for at least 20 minutes)
Heat butter in medium skillet over medium heat stirring often until it gets foamy, then browns. Be careful not to burn it! This can take 5-10 minutes. Pour into 9 x 13 inch baking dish.
In medium bowl, whisk together flour, xanthan gum (if using), baking powder, salt & 1¾ cup sugar. (I use a bowl with a pour spout.)
Whisk in milk & vanilla. Mix until smooth. It will be about the consistency of pancake batter.
Using a ladle or large spoon, or from bowl with pour spout, gently pour batter over butter so butter swirls & mixes into batter.
If using any berries, stir into peaches.
Top evenly with prepared peaches & blueberries or raspberries, if using. Some of the fruit will sink into the batter - that’s ok!
Bake at 375° about 1 hour, until top is golden brown & edges are bubbling.
Let cool a few minutes before serving.
Notes:
When choosing your peaches, try to get them at the “just ripe” stage. If they are too hard (under ripe), they won’t have much flavor. And if they are too ripe, they may be a little soft to handle. Also I try to stay away from “cling” peaches – these are the ones that do NOT pull away from their pit.
I found that the cobbler made with Bob’s Red Mill 1 to 1 GF flour was a little heavy & spongy. Trader Joe’s GF flour blend worked better, the cobbler was a lighter & less spongy. However, both had a really good flavor!
This is a great summer dessert! It’s good with or without the berries, it’s just a matter of personal taste! It’s delicious served with vanilla ice cream or whipped cream.
