Pizza - Thin Crust
1 cup warm water (about 110°)
2 tsp active dry yeast
2 tsp sugar
1½ cups Bob’s Red Mill 1 to 1 GF flour + 1½ tsp xanthan gum or 1½ cups Bob’s Red Mill GF All Purpose flour + 2½ tsp xanthan gum or 1½ cups of your favorite GF flour + 1½ tsp xanthan gum (if your flour already contains xantham gum) or + 2½ tsp xanthan gum (if your flour does not contain xantham gum)
1 tsp salt
½ tsp baking powder
Cornmeal (to sprinkle on baking pan)
Toppings – your choice!
Combine warm water, yeast & sugar. Let stand for about 5 minutes or so, until it gets foamy & starts growing.
While yeast is proofing, whisk together flour, xanthan gum, salt & baking powder. You can use the whisk attachment on your stand mixer, but I prefer to just whisk it by hand.
When the yeast is ready, pour into flour mixture & mix until dough forms. The original recipe recommends a dough hook, but I prefer the paddle attachment on my mixer. (The dough hook on my mixer didn’t seem to really mix the dough very well.) The dough will be soft & sticky.
Cover the bowl with plastic wrap & let rise until double, about 1½ - 2 hours. (My kitchen tends to be chilly, so I turn my oven on to 200° & set the bowl on top of the stove. This works well for me, as the dough rises nicely.)
When the dough is ready, preheat your oven to 450°. Line a baking sheet with parchment paper & lightly sprinkle with cornmeal.
With wet hands, work the dough into the shape you want (1 large pizza crust, or 2 smaller pizza crusts). The dough really is quite sticky, so I just keep dipping my hands in water as I am working the crust. The crust will rise a bit when it bakes, so spread the dough pretty thin.
Top with your favorite toppings.
Bake for 20 – 25 minutes, until crust is a nice golden brown & the cheese is melted.

I like using the Bob’s Red Mill GF 1 to 1 flour blend because it doesn’t have the aftertaste that the Bob’s Red Mill GF All Purpose flour does.
This is the easiest GF thin pizza crust recipe I have found & it has a great texture! If I’m making pizza just for myself, the recipe is easy to cut in half. It is a large individual size crust.
